Simple, yet harty casserole that's a cinch to prepare and tastes even better the second night - if there's any left!

Ingredients

  • 1 lb lean ground beef
  • 1 medium onion chopped
  • 1 clove garlic minced
  • 1 16 oz pkg coleslaw mix
  • 3 cups uncooked Minute Rice
  • 2 14 oz tins tomato soup

Method

Preheat oven to 350 degrees F. Scramble fry the ground beef, onion and garlic until crumbly and cooked until meat throughly browned. Prepare minute rice as per package directions. Once beef and rice are both cooked, layer in a greased 2.5 quart casserole dish, alternating with layers of cole slaw mix and tomato soup. Top with remaining soup. Cover and bake for 35 minutes. Remove cover and continuing baking for the last 10 minutes or until casserole is heated all the way through.
