MethodHeat olive oil in large dutch oven, over medium heat. Add onion, red pepper celery carrot. Saute until softened, about 10 minutes. Add garlic, saute 2 minutes. Add meat, saute until no longer pink. Add wine and vinegar, simmer 5 minutes. Add tomatoes, and stewed tomatoes, tomato paste, and all spices. Bring to boil, then reduce heat and simmer, covered partially stirring often 20 minutes.
Meanwhile, bring large pot of salted water to boil and cook ziti al dente. Drain. Drizzle with one tsp. olive oil and toss to coat. Remove beef mixture from heat and stir in cheeses to coat. Toss in pasta and stir.
