Creamy Chicken, Bacon and Tomato Pasta

  • 3 cups whole wheat farfalle pasta
  • 3 cups whole wheat bow-tie pasta
  • 1 in boneless skinless chicken breast
  • 3 slices bacon
  • 1 can diced tomatoes Italian style
  • 125 g light cream cheese
  • 1/2 cup water
  • 1/4 teaspoon pepper
  • 3 tablespoons light Parmesan cheese grated


Cook pasta as directed on package. Meanwhile, cook chicken in large skillet on medium heat 5 to 6 minutes or until chicken is done, stirring occasionally. Add bacon, tomatoes, cream cheese spread, water and pepper; mix well. Cook 3 minutes or until cream cheese is completely melted and mixture is well blended, stirring frequently. Drain pasta; place in large bowl. Add sauce; mix lightly. Sprinkle with Parmesan cheese.
