Ingredients

  • 1 egg
  • 1/4 cup milk
  • 24 unsalted soda crackers crushed
  • 1 teaspoon garlic powder
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 tilapia fillets (1-1/2 lb/675 g total)
  • 3 tablespoons butter
Lime Chili Mayo:
  • 1/3 cup light mayonnaise
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice
  • 2 teaspoons minced seeded jalapeño pepper
  • 1 pinch salt

Method

Lime Chili Mayo: Stir together mayonnaise, cilantro, lime juice, jalape?o pepper and salt; set aside.

In shallow dish, whisk egg with milk. In separate shallow dish, stir together crackers, garlic powder, coriander, salt and pepper.

One at a time, dip fillets into egg mixture, turning to coat and allowing excess to drip off. Place in cracker mixture, pressing to coat.

In skillet in batches, melt butter over medium heat; cook fish, turning once, until golden and fish flakes easily when tested with fork, about 12 minutes. Serve with mayo.
