Sometimes just a few ingredients can make the best dish. This dead-simple cucumber salad is big in flavour and a perfect way to use garden-fresh veg, and a great side to grilled meatballs.

Ingredients

  • 1 English cucumber seeded and diced
  • 1/3 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon granulated sugar
  • pinch each salt and pepper

Method

In large bowl, toss together cucumber, onion, cilantro, oil, sugar, salt and pepper. Let stand for 10 minutes before serving.
