Dairy-Free Raspberry Lime Freezes

This refreshing treat is a cross between a frozen dessert and a smoothie. Double-check the ingredients in the sorbet or sherbet to ensure they are dairy-free if you're making this for someone with a food sensitivity.

Ingredients

  • 3 cups frozen raspberries (do not thaw)
  • 1 1/2 cup raspberry sorbet
  • 1 1/2 cup rainbow sorbet
  • 1 1/2 cup sherbet
  • 1 cup coconut milk
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon lime juice
  • mint leaves

Method

In blender, combine 2 cups of the raspberries, sorbet, coconut milk, chopped mint and lime juice; pulse just until blended and smooth. Stir in remaining raspberries.

Pour into 4 glasses or bowls; garnish with mint leaves. Serve at once.
