Do-It-Yourself Pizza

Shortcuts - Use timer on bread machine to make dough while you're busy, or use prepared pizza dough. - Use prepared pizza or pasta sauce. - Buy sliced mushrooms, frozen chopped spinach and sliced cheese.

Ingredients

  • 1 tablespoon vegetable oil
  • 8 oz sliced mushrooms
  • 1 onion chopped
  • 1 1/2 teaspoon bottled minced garlic (or 2 cloves, minced)
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pkg frozen chopped spinach thawed
  • 3/4 cups pizza sauce
  • 3/4 cups pasta sauce
  • 1 pkg (125 g) provolone cheese
Pizza Dough:
  • 1/2 cup water
  • 1 1/2 teaspoon extra-virgin olive oil
  • 1 1/2 teaspoon vegetabIe oil
  • 1/2 teaspoon salt
  • 1 1/2 cup all-purpose flour
  • 1 teaspoon quick-rising instant dry yeast

Method

Pizza Dough: Into pan of bread machine, add (in order) water, oil, salt, flour and yeast. (Do not let yeast touch liquid.) Choose dough setting.

Turn out dough onto lightly floured surface; shape into disc. Roll out into 12-inch (30 cm) circle, letting rest if too elastic to roll. Lightly grease 12-inch (30 cm) pizza pan; centre dough on pan. Let rise for 10 minutes.

Meanwhile, in large nonstick skillet, heat oil over medium-high heat; sauté mushrooms, onion, garlic, oregano, salt and pepper until mushrooms are golden, about 10 minutes. Squeeze spinach dry; add to skillet and stir to combine.

Spread pizza sauce over pizza dough. Top with mushroom mixture. Cut each provolone slice in half; arrange over top. Bake on bottom rack of 500°F (260°C) oven until cheese is bubbly and crust is golden and slightly puffed, about 10 minutes.
