Choose clear pure mint-and-peppermint extract instead of pink or red peppermint extract for a deeper, more rounded minty flavour. Stir it into the ice cream before chilling in the fridge.

Ingredients

  • 1 teaspoon pure mint-and-peppermint extract
  • Dark and Delicious Chocolate Ice Cream recipe
  • 2 oz good-quality white chocolate melted

Method

Stir extract into ice cream before chilling in metal cake pan.

Alternate layers of puréed or soft ice cream and drizzlings of white chocolate in freezer container. Cover and freeze until firm, about 4 hours.
