This is a versatile dish that can be made for a healthy quick lunch or dinner as is...or change the spices and cheese and add already cooked meat on hand for a more substantial meal.

- 2 cups can or fresh tomatoes diced
- 2 cups fresh spinach
- 2 eggs
- 1/2 cup grated old Cheddar cheese
MethodPut tomatoes in saucepan and bring to simmer.
Add spices - salt, pepper, oregano and basil to taste add spinach - let wilt crack egg on top of spinach place lid on pan to poach eggs to desired consistency remove lid and sprinkle on old Canadian chedder cheese cover pot and remove from heat - cheese will melt in 30 seconds.
Serve alone, with salad and crusty roll.
