Fruit Beer Sabayon

Unusual beers, such as fruit beers, are increasing in popularity now that Canadians can try more than the wares from the big breweries. Serve this over any fresh fruit that complements your choice of beer.

  • Portion size 6 servings

Ingredients

  • 2/3 cups fruit beer, such as framboise
  • 2/3 cups fruit beer, such as peach lambic
  • 6 egg yolks
  • 1/3 cup granulated sugar

Method

In heatproof bowl over saucepan of simmering water, whisk together beer, egg yolks and sugar; cook, whisking constantly, until thick enough to mound softly on spoon, 5 to 7 minutes.
