Fruit Blondies With fruit and nuts in every bite, these squares from Elizabeth Baird, our food and nutrition editor, are so irresistible that you'll want to make them again and again. So vary them by using other nuts, slivered dried apricots or chocolate chips.

Ingredients

  • 1/2 cup butter softened
  • 3/4 cups packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1 cup chopped candied fruit
  • 1/2 cup toasted chopped almond
  • 1/4 cup golden raisins
Orange Icing:
  • 1 cup icing sugar
  • 2 tablespoons butter softened
  • 4 teaspoons frozen orange juice concentrate thawed

Method

Grease 8-inch (2 L) square metal cake pan; set aside.

In large bowl, beat butter with sugar until fluffy; beat in egg and vanilla. In separate bowl, combine flour, baking powder, salt and ginger; stir into butter mixture. Mix in fruit, almonds and raisins. Spread in prepared pan.

Bake in centre of 350°F (180°C) oven for 25 to 30 minutes or until tester inserted in centre comes out clean. Let cool in pan on rack.

Orange Icing: In bowl, blend sugar with butter; stir in orange juice concentrate until smooth. Spread over base.

Store in airtight container at room temperature for 2 days before cutting into squares. (Make-ahead: Layer between waxed paper in airtight container and freeze for up to 1 month.)
