Ginger Chicken Stir-Fry

Serve this tasty stir-fry with rice for a quick easy supper.

Ingredients

  • 2 tablespoons vegetable oil
  • 2 tablespoons slivered gingerroot
  • 1 clove garlic minced
  • 2 boneless skinless chicken breasts cubed
  • 2 onions chopped
  • 1 sweet red pepper diced
  • 1 green pepper diced
  • 1 cup sliced mushroom
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 2 tablespoons chopped fresh coriander
  • 2 tablespoons chopped mint
  • 2 tablespoons chopped green onions

Method

In skillet or wok, heat oil over high heat; stir-fry ginger and garlic for 30 seconds or until fragrant. Add chicken; stir-fry for 2 to 4 minutes or until lightly browned. Add onions, sweet pepper and mushrooms to skillet; stir fry for 1 to 3 minutes or until softened. Stir in soy and oyster sauces, tossing to coat. Sprinkle with coriander.
