Green Bean and Feta Salad with Tomato Dressing

Refreshing, crunchy green beans pair well with a sharp, salty flavour, such as that of feta cheese. Serve with crusty bread to soak up this tasty dressing.

Ingredients

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons wine vinegar
  • 1 tablespoon chopped fresh oregano leaf
  • 1 pinch salt
  • 1 pinch pepper
  • 1 plum tomato finely chopped
  • 1 lb green bean cooked
  • 1/4 cup coarsely crumbled feta cheese

Method

In bowl, whisk together oil, vinegar, oregano, salt and pepper. Add tomato and beans; toss to coat. Sprinkle with feta cheese.
