Bright-green tender-crisp beans are the perfect companion to classic roast chicken. Salty feta cheese and a touch of lemon take this dish over the top.

Ingredients

  • 1 1/4 lb green bean trimmed
  • 1 tablespoon olive oil
  • 2 shallots diced
  • 2 cloves garlic minced
  • 1/3 cup finely diced sweet red pepper
  • 1 pinch salt
  • 1 pepper
  • 2 teaspoons lemon juice
  • 1/4 cup crumbled feta cheese

Method

In large pot of boiling salted water, cook green beans until bright green and slightly softened, about 3 minutes; drain well.

In large skillet, heat olive oil over medium-high heat; sauté shallots and garlic until softened, 2 to 3 minutes. Add sweet red pepper, salt and pepper; cook until softened, about 2 minutes.

Add beans; cook, stirring, until tender-crisp, about 2 minutes. Stir in lemon juice; transfer to serving bowl. Sprinkle with feta cheese.
