Bright-green tender-crisp beans are the perfect companion to classic roast chicken. Salty feta cheese and a touch of lemon take this dish over the top.

Ingredients
- 1 1/4 lb green bean trimmed
- 1 tablespoon olive oil
- 2 shallots diced
- 2 cloves garlic minced
- 1/3 cup finely diced sweet red pepper
- 1 pinch salt
- 1 pepper
- 2 teaspoons lemon juice
- 1/4 cup crumbled feta cheese
Method
In large pot of boiling salted water, cook green beans until bright green and slightly softened, about 3 minutes; drain well.In large skillet, heat olive oil over medium-high heat; sauté shallots and garlic until softened, 2 to 3 minutes. Add sweet red pepper, salt and pepper; cook until softened, about 2 minutes.
Add beans; cook, stirring, until tender-crisp, about 2 minutes. Stir in lemon juice; transfer to serving bowl. Sprinkle with feta cheese.
