Diningding (pronounced with short "i"s as in "thing") is an Ilocano specialty from northern Philippines, where vegetables and fish play the largest role in cuisine. Use this recipe as a guideline and vary the vegetables according to availability and freshness. In Canada, black cod (sablefish), salmon or halibut are especially good for diningding, but freshwater fish, such as pickerel or whitefish, also makes a tasty dish.

Method

Sprinkle fish with 1/4 tsp (1 mL) of the pepper and salt. Grill or broil until fish flakes easily when tested, 8 to 10 minutes per 1 inch (2.5 cm) of thickness.

Meanwhile, bring 4 cups (1 L) water, shallots, fish sauce, ginger and remaining pepper to boil. Add oyster and king mushrooms, squash, lima beans, okra and bamboo shoots; return to boil. Reduce heat and simmer until vegetables are tender, about 7 minutes.

Add spinach and enoki mushrooms; simmer until tender, 2 to 3 minutes. Ladle into bowls; top with fish. Serve with lime wedges.
