For truly easy summer cooking, just wrap up the vegetables and let the grill do the rest. Add other favourite vegetables in season, such as green and yellow beans, broccoli, zucchini, sugar snap peas and sweet peppers.

Ingredients

  • 8 carrots sliced
  • 8 new potatoes
  • 4 onions chopped
  • 2 tablespoons vegetable oil
  • 2 tablespoons chopped fresh herbs (such as basil, oregano and parsley)
  • 1/2 teaspoon each salt and pepper

Method

Divide carrots, potatoes and onions between 2 large pieces of greased heavy-duty foil; sprinkle with oil, herbs, salt and pepper. Seal and place on grill over medium-high heat; close lid and cook, turning once, until tender, about 20 minutes.
