This lightly spiced meat loaf borrows flavours from North Africa. If you don't have couscous on hand, substitute 1/2 cup fresh bread crumbs. You'll find harissa, a fiery hot sauce, in Middle Eastern grocery stores and some supermarkets.

Ingredients

  • 2 teaspoons olive oil
  • 1 onion finely chopped
  • 1 tablespoon harissa
  • 3 cloves garlic minced
  • 1 teaspoon ground coriander
  • 1/4 teaspoon cinnamon
  • 1/2 cup dried fig finely chopped
  • 3 tablespoons couscous
  • 1 egg
  • 1 lb lean ground beef
Coriander Mash:
  • 2 lbs yellow-fleshed potatoes (about 4 large), peeled and chopped
  • 1/4 cup butter
  • 1 onion thinly sliced
  • 1 teaspoon ground coriander
  • 3/4 teaspoons salt
  • 1/2 teaspoon pepper
Tomato Harissa Sauce:
  • 1 cup bottled strained tomatoes (passata)
  • 1 tablespoon liquid honey
  • 1 tablespoon white wine vinegar
  • 2 teaspoons harissa
  • 1 clove garlic minced
  • 1 pinch salt

Method

In large skillet, heat oil over medium heat; cook onion, stirring occasionally, until softened, about 5 minutes. Stir in harissa, garlic, coriander and cinnamon; cook, stirring, for 1 minute. Scrape into large bowl; let cool.

Add figs, couscous and egg to onion mixture; stir in beef until combined. Press into 8- x 4-inch (1.5 L) loaf pan, rounding top. Bake in 350ºF (180ºC) oven until instant-read thermometer inserted in centre of loaf registers 160ºF (71ºC), 35 to 45 minutes. Let stand for 5 minutes.

Coriander Mash: In large pot of boiling lightly salted water, cook potatoes until tender, about 15 minutes. Reserving 1 cup cooking liquid, drain and mash.

Meanwhile, in small saucepan, melt butter over medium heat; cook onion, coriander, salt and pepper, stirring often, until onion is light golden, about 8 minutes. Stir into potatoes along with enough of the reserved cooking liquid to loosen to desired consistency.

Tomato Harissa Sauce: In small saucepan, combine strained tomatoes, honey, vinegar, harissa, garlic and salt; bring to boil. Reduce heat to medium; simmer, stirring occasionally, until reduced to 3/4 cup, 10 to 15 minutes. Serve with meat loaf and coriander mash.
