Crushed pineapple and a hoisin glaze provide a tropical twist to this ultramoist meat loaf. Serve with rice and steamed sugar snap peas for a dinner your whole family will love.

Ingredients

  • 3/4 cups fresh bread crumbs
  • 1/2 cup drained,canned,crushed pineapple
  • 1 egg beaten
  • 2 green onions thinly sliced
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic grated
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 450 g lean ground pork
  • 2 tablespoons hoisin sauce
  • 1 teaspoon unseasoned rice vinegar

Method

In large bowl, stir together bread crumbs, pineapple, egg, green onions, ginger, garlic, coriander and salt. Add pork; mix to combine. Shape into 7- x 4-inch (18 x 10 cm) log; place on foil lined rimmed baking sheet.Stir hoisin sauce with vinegar; brush all over loaf.

Bake in 375 F (190 C) oven until instant-read thermometer inserted into centre reads 160 F (71 C), about 45 minutes. Let stand for 10 minutes before slicing.
