Healthy Slow Cooker Lasagna

I got a slow cooker last Christmas and didn't know what to do with it. Guess what...I can do almost any recipe that is somewhat saucy. I am Italian and have always enjoyed classic lasagna--so I tried lasagna in the slow cooker and it worked! Try this "healthier" version. Sauce can be made the night before. Assembly takes 5 minutes in the morning and you can come home from work knowing that a hearty and healthy meal is waiting--the house will smell terrific!

1. In a large pot, saute ground meat, sausage, onion and garlic until cooked. (about 5 to 7 minutes) Drain to remove excess fat. 2. Return drained food to pot. Add tomato sauce and mix well. 3. In a separate bowl, mix your cottage cheese with 1/2 of your mozzarella and parmesan if using. 4. Lightly spray or grease with oil your slowcooker (6 to 8 quart size). Spread 1/4 of your tomato sauce mixture on the bottom. 5. Take your lasagna noodles and quickly pour some water on them to dampen them. Place 4 or 5 or so on bottom (have to break them so they fit). 6. Spread 1/2 of your cheese mixture on top of noodles, ensuring your noodles are covered. 7. Spread another 1/4 of your tomato sauce. 8. Repeat layers two more times. Last layer should be your tomato sauce mixture. 9. Slow cook 3-4 hours on high or 6-8 hours on low. You know it's ready when the noodles are tender. 10. 10 minutes before you are ready to serve, spread reserved mozzarella on top and cook on low for another 10 minutes.
