A big, fresh bowl of Hearty Greens With Creamy Tahini Dressing is my go-to dish for any potluck. It complements everything on the table and adds a welcome touch of freshness. This salad, with just a hint of sweetness in the dressing, will have everyone begging for the recipe. The greens are hearty and hold well once dressed, but for best results, toss the salad just before people start to tuck into the food.

Ingredients

  • 6 cups lightly packed baby spinach leaves
  • 6 cups lightly packed torn escarole leaves
  • 6 cups lightly packed torn frisée
  • 1 carrots julienned
  • 1/2 cup toasted pecan halves halved
  • 1/3 cup dried cranberry
Creamy Tahini Dressing:
  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon tahini
  • 1/4 teaspoon each salt and pepper

Method

Creamy Tahini Dressing: In bowl or glass jar, whisk or shake oil, vinegar, maple syrup, tahini, salt and pepper until combined.

In large bowl, combine spinach, escarole, frisée, carrot, pecans and cranberries.

Drizzle with dressing; toss to coat.
