Heirloom tomatoes are a sweet taste of summer all on their own, but they really shine in this simple salad. A perfect side dish to grilled steak.

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon sherry vinegar
  • pinch each salt and pepper
  • 450 g halved or quartered mini heirloom tomatoes
  • 1 rib celery thinly sliced
  • 1/3 cup chopped fresh parsley

Method

In large bowl, whisk together oil, vinegar, salt and pepper. Stir in tomatoes, celery and parsley; toss to combine.
