Hoisin-Glazed Meat Loaf

Ingredients

  • 2 eggs
  • 2 cups fresh bread crumbs
  • 2 cups grated carrots
  • 4 cloves garlic minced
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup thinly sliced green onion (about 6)
  • 2 lbs lean ground pork
  • 1/2 cup hoisin sauce

Method

In large bowl, whisk eggs. Mix in bread crumbs, carrots, garlic, ginger, salt, pepper and 3/4 cup (175 mL) of the green onions. Mix in pork.

Pack into 8- x 4-inch (1.5 L) loaf pan, mounding top. Spread hoisin sauce over top; roast in 400°F (200°C) oven until meat thermometer registers 160°F ( 71°C), about 1 hour. Sprinkle with remaining green onions.
