Homemade Macaroni & Cheese

Homemade Macaroni & Cheese is just so much better than one prepared from a box. A multitude of yummy fresh cheeses mixed with the sweet flavour and aroma of rosemary will have your whole family requesting seconds. Best served with a caesar salad and cooked ham. Or if you choose just a simple piece of toasted garlic bread.

  • 4 cups whole wheat macaroni
  • 1 cup light cream cheese
  • 1 cup Cheddar cheese shredded
  • 1 cup Swiss cheese shredded
  • 1 cup mozzarella cheese shredded
  • 1 cup Parmesan cheese grated
  • 1 medium sweet onion chopped
  • 1 tablespoon fresh rosemary minced
  • 1/2 cup butter
  • 1/2 cup whole wheat flour
  • 2 pinches ground pepper
  • 1 pinch salt
  • 1/2 cup milk


Cook pasta al dente, drain and rinse it. Saute onion in butter until soft. Add rosemary. Sprinkle in flour and let simmer on medium for 3 to 4 minutes. Add milk and whisk. When hot add in cheeses and stir until melted. Add in rinsed pasta and season. Add more milk if needed.
