Honey Hoisin Chicken Sandwich

  • 8 boneless skinless chicken breasts
  • 1 ciabatta bread or 8 pada buns
  • 1/4 cup liquid honey
  • 1/4 cup hoisin sauce
  • 1/4 cup orange juice
  • 1/4 cup ketchup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon ground ginger
  • 2 cloves of garlic minced
  • tomatoes
  • cucumber
  • leaf lettuce


Pound chicken breasts to evenly flatten to about 3/4-inch (2 cm) thickness.

In large bowl, stir together honey, hoisin sauce, orange juice, ketchup, mustard, Worcestershire sauce, ginger and garlic; add chicken and turn to coat. Cover and refrigerate to marinate for 2 hours.

Reserving marinade, place chicken on greased grill over medium-high heat; close lid and cook for 5 minutes, brushing occasionally with reserved marinade. Turn and cook for about 5 minutes longer or until no longer pink inside.

Cut bread into 5-inch (12 cm) squares; cut each in half horizontally. Toast cut sides on grill.

Sandwich chicken, tomatoes, cucumbers and lettuce in bread.
