A quick dish to prepare for as many as you wish. I make this for one (just for myself) or four people when I have quests. I am a big fan of honey and tarragon goes so well with it.

  • 4 chicken breasts
  • 4 tablespoons honey
  • 4 teaspoons dried tarragon
  • 1 tablespoon fresh ground pepper
  • 1 sprinkle salt
  • 1 cup grated Cheddar cheese
  • 1 cup grated your favourite


Preheat oven to 350 degrees. Brush a casserole dish with olive oil. Score breasts with a sharp knife, criss-cross pattern. Using about 1 tbsp of honey and 1 tsp of taragon, brush each with honey, sprinkle with taragon, pepper and salt. Place in dish, bone side down and place in oven uncovered until juices in dish have carmelized. cover dish and continue to cook. When done, remove chicken from dish and add a little water to get all the juices from bottom and then drizzle over chicken. Top with grated cheese.
