Horseradish Beef Roll-ups

Why spend money at the takeout counter for a roast beef sandwich when you can make this tasty, lean tortilla version?

Ingredients

  • 2 tablespoons spreadable light cream cheese
  • 1 tablespoon prepared horseradish
  • 2 teaspoons Dijon mustard
  • 1 flour tortilla
  • 2 slices lean roast beef
  • 1/4 cup radish sprout
  • 1/4 cup alfalfa sprouts

Method

In small bowl, stir together cream cheese, horseradish and mustard; spread on tortilla. Arrange roast beef on top, leaving 1 inch (2.5 cm) border at top; sprinkle with sprouts. Roll up tightly from bottom, pressing to seal. Cut in half crosswise. (Roll-up can be wrapped in plastic wrap and refrigerated for up to 1 day.)
