- 4 Italian sausages
- 32 cubes Italian bread
- 24 cherry tomatoes
- 1/4 cup olive oil
- 3 tablespoons balsamic vinegar
- 2 tablespoons chopped fresh oregano leaves
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon grated Parmesan cheese
Prick sausages all over; place in microwaveable dish. Cover with plastic wrap; microwave at High until firm, about 5 minutes. Let cool slightly; cut into quarters.
Onto each of 8 metal skewers, alternately thread 4 bread cubes, 3 tomatoes and 2 sausage pieces. In small bowl, whisk together oil, vinegar, oregano, salt and pepper; brush some over kabobs.
Place kabobs on greased grill over medium-high heat; brush with some of the oil mixture. Close lid and cook, turning and basting twice with remaining oil mixture, until sausage is browned and bread is crisp, about 8 minutes. Serve sprinkled with cheese.
