This is a deliciously smooth fat-free substitute for cream cheese or butter. Add granulated sugar to taste to use as a spread on muffins or sweet bread.

  • Portion size 250 servings

Ingredients

  • 2 cups plain low-fat yogurt
  • 1/2 teaspoon lemon juice

Method

Spoon yogurt into cheesecloth-lined sieve set over bowl; cover and let drain in refrigerator overnight or until reduced to about 1 cup (250 mL). Discard liquid. In bowl, combine thickened yogurt with lemon juice. Cover and refrigerate for 2 hours.
