Lemon Herb Marinade

This Mediterranean marinade is fabulous for our three kabobs.

  • Portion size 125 servings

Ingredients

  • 1/4 cup lemon juice
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon sherry vinegar
  • 1 tablespoon wine vinegar
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 lemon rind
  • 2 bay leaves quartered
  • 2 tablespoons chopped fresh herbs rosemary oregano or parsley) or 2 tsp (10 mL) dried

Method

In small bowl, whisk together lemon juice, olive oil, vinegar, garlic, salt and pepper. Mix in lemon rind, bay leaves and herbs.
