Lemon Potatoes

Ingredients

  • 4 red potatoes
  • 2 tablespoons olive oil
  • 1 tablespoon grated lemon rind
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Method

Scrub potatoes; cut into 8 wedges each and place in bowl. Add oil, grated lemon rind, salt and pepper; gently toss to coat.

Reserving any oil mixture, place potatoes on greased grill over medium-high heat; close lid and cook, turning halfway through and brushing with oil mixture, for 25 minutes or until golden and tender.
