Lemony Chicken Burgers

You'll find these fresh-tasting burgers a little moist to pat into shape, but they firm up nicely on the grill. Pile them into buns and top with rings of sweet pepper.

  • Portion size 6 servings

Ingredients

  • 1 egg
  • 1/4 cup dry breadcrumbs
  • 1 small onion grated
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons chopped green onions
  • 1 tablespoon grated lemon rind
  • 1 tablespoon lemon juice
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 lb lean ground chicken
  • 6 hamburger buns

Method

In bowl, beat egg; mix in bread crumbs, onion, chives, lemon rind and juice, 1 tbsp (15 mL) water, mustard, salt and pepper. Mix in chicken; shape into six 3/4-inch (2 cm) thick patties. Place on greased grill over medium-high heat; cook for 6 to 7 minutes per side or until no longer pink inside. Sandwich in buns.
