Lightened-Up Spinach Dip

This vibrant green dip pairs perfectly with favourite crackers or flatbread.

Ingredients

  • 1 cup frozen edamame (shelled soybeans)
  • 3 cloves garlic
  • 6 cups packed trimmed spinach leaves
  • 1 green onion chopped
  • 2/3 cups sour cream
  • 3 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Method

In large saucepan of boiling salted water, cook soybeans and garlic for 3 minutes.

Add spinach; cook until soybeans and garlic are tender, 1 minute. Drain well; press out most of the liquid with back of spoon. Transfer to food processor; let cool for 10 minutes.

Add green onion, sour cream, lemon juice, salt and pepper; purée until smooth. (Make-ahead: Refrigerate in airtight container for up to 24 hours.)
