Method

In large saucepan of boiling salted water, cook soybeans and garlic for 3 minutes.

Add spinach; cook until soybeans and garlic are tender, 1 minute. Drain well; press out most of the liquid with back of spoon. Transfer to food processor; let cool for 10 minutes.

Add green onion, sour cream, lemon juice, salt and pepper; purée until smooth. (Make-ahead: Refrigerate in airtight container for up to 24 hours.)
