Mango Avocado Salad With Tofu

This refreshing salad is perfect for parties on the patio! Enjoy it served in individual cups or throw it together in a large bowl for family style sharing.

Ingredients

  • 3/4 pkg (350 g) Sunrise Medium Firm Tofu (454g) crumbled
  • 2 ripe, medium-sized avocados , pitted and cubed
  • 2 ripe medium-sized mangoes , pitted and cubed
  • 2 tablespoons canned/jarred roasted red pepper , chopped
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon salt
  • 1 tablespoon brown sugar
  • 1 (300 g) bag tortilla chips

Method

In a large bowl, combine all ingredients. Gently mix until well combined. Cover and refrigerate for 1 hour.

Spoon ingredients into individual glass cups or bowls. Serve with tortilla chips.
