Inspired by the classic Italian cocktail made of sparkling wine and peach purée, this bellini features a surprisingly sweet substitution: mango! Puréeing the frozen fruit with mango juice adds silky body to the bubbly.

Ingredients

  • 1 cup frozen mango chunks
  • 1 cup mango juice
  • 1 bottle sparkling wine chilled

Method

In blender, purée mango chunks with mango juice, scraping down side as needed, until smooth. Pour into pitcher; stir in wine. Serve immediately.
