Mashed Sweet Potatoes

Ingredients

  • 4 sweet potatoes peeled and cubed
  • 1/4 cup sodium-reduced chicken stock
  • 1/2 teaspoon pepper
  • 2 green onions sliced

Method

In large saucepan of boiling salted water, cover and cook potatoes until tender, about 10 minutes. Drain and return to pot. Add chicken stock and pepper; mash until smooth. Serve sprinkled with green onions.
