Designed in an effort to offer broccoli yet again to an ever resistant family. Cheese and garlic can always win them round!

  • 2 bunches broccoli broken into florets
  • 1 onion finely chopped
  • 2 cloves garlic pressed
  • 2 tablespoons butter
  • 1/2 lb fresh mushroom halved or quartered
  • 1 cup slivered almonds
  • 1 can golden mushroom soup
  • 4 oz old Cheddar cheese grated
  • 1/2 cup dry breadcrumbs


Steam broccoli 10 mins. Remove from heat, and set aside. Gently saute onion and garlic in butter until soft but not brown. Stir together onion mixture, mushrooms. broccoli, soup, cheese and 3/4cup of the almonds. Tumble into 8cup casserole and sprinkle with crumbs and remaining almonds. Bake at 350F. for 30 mins until golden.
