Ingredients

  • 1 Sour Cream Pastry for Mini Quiches recipe
Filling:
  • 6 oz smoked salmon chopped
  • 1/2 pkg (250 g pkg) cream cheese diced
  • 4 eggs
  • 1 cup milk
  • 2 1/2 tablespoons chopped fresh dill
  • 2 green onions minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Method

IOn floured surface, roll out pastry to generous 1/8-inch (3 mm) thickness. Using 4-inch (10 cm) round pastry cutter, cut out 24 rounds. Fit into 24 muffin cups, without trimming. Prick all over with fork. Place on rimmed baking sheet; refrigerate for 30 minutes.

Line shells with foil; fill with pie weights or dried beans. Bake on bottom rack in 400ºF (200ºC) oven until rims are light golden, about 10 minutes. Remove weights and foil; let cool in pan on rack.

Filling: Sprinkle salmon and cream cheese into shells. Whisk together eggs, milk, dill, green onions, salt and pepper; pour into shells.

Bake in 375ºF (190ºC) oven until knife inserted in centre comes out clean, 20 minutes. Let cool in pan on rack for 5 minutes. (Make-ahead: Let cool. Layer between waxed paper in airtight container and refrigerate for up to 24 hours or freeze for up to 2 weeks. Thaw if frozen; reheat in 350ºF/180ºC oven for 10 minutes.)
