- 1/4 cup miso paste
- 1 tablespoon vegetable oil
- 1 tablespoon granulated sugar
- 1 tablespoon mirin
- 1 tablespoon sake
- 2 teaspoons minced gingerroot
- 4 salmon fillets skin-on
MethodIn bowl, whisk together miso, oil, sugar, mirin, sake (if using) and ginger; add salmon, turning to coat. Let stand for 10 minutes or for up to 8 hours.
Place salmon on greased foil-lined baking sheet. Roast in 400°F (200°C) oven until fish flakes easily when tested, 10 to 12 minutes. Broil until crusty and browned. Makes 4 servings.
