Mixed Greens with Lemon Chive Dressing

Many bagged salad mixes are available, so choose your favourite mix of contrasting colours and flavours or try a toss of mache, frisee, Boston lettuce and arugula.

Ingredients

  • 1 bulb fennel
  • 8 cups (2 l) mixed salad greens
Dressing:
  • 1/4 cup vegetable oil
  • 3 tablespoons lemon juice
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons chopped green onions
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Method

Dressing: In bowl, whisk oil, lemon juice, chives, mustard, salt and pepper.

Cut fennel in half; remove core. With knife or mandoline, thinly slice lengthwise; place in separate bowl and toss with 2 tbsp (25 mL) of the dressing. (Make-ahead: Cover and refrigerate dressing and fennel separately for up to 24 hours.)

In large bowl, toss together greens, fennel and remaining dressing.
