My Mother in law gave this recipe to me. It was submitted to an old community cookbook from the '80's. I have changed it up quite a bit...it is one sure way to get tomatoes into my sons. Just dump in the ingredients and go do some homework with the kids.

Ingredients

  • 1 can diced tomatoes
  • 1 onion diced
  • 1 cup ham diced
  • 1 cup hot water
  • 1 1/2 cup whole wheat macaroni
  • 1 cup medium Cheddar cheese shredded
  • 1 pinch pepper

Method

Preheat the oven to 350F I put all of these ingredients into a 2 QT covered casserole, stir the ingredients, stir again after 30 minutes,and after 1 hr. This is delicious served with a garden salad and a scoop of light cottage cheese on the side. The cheesy tomato sauce and cottage cheese flavours are awesome in the same bite.
