Ingredients

  • 1 zucchini
  • 1 onion
  • 1 red pepper
  • 5 cloves garlic minced
  • 1 carrots thinly sliced
  • 1 potato cubed
  • 1 package vegetable soup mix
  • 7 cups water
  • 1 can stewed tomatoes
  • 1 can lentil soup drained and rinsed (540 ml can)
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1/2 teaspoon tumeric
  • 1/8 teaspoon cayenne pepper

Method

Fry zucchini, pepper, onion, and garlic in one tbsp. of oil. Add all of the ingredients in a crock pot and cook on low for the whole day (8 - 10 hours). Enjoy with a slice of multigrain bread.
