Nana's Casserole

A little more than macaroni and cheese - named Nana's casserole by my daughter who loved it when Nana used to make it for her.

  • 1 cup elbow macaroni
  • 4 cups boiling water
  • 1 teaspoon salt
  • 250 g ground beef
  • 1 cup shredded Cheddar cheese
  • 1 1/2 cup canned tomatoes broken up
  • 1 1/2 cup canned tomato juice broken up
  • 1/4 teaspoon salt
  • 1 onion chopped
  • 1/8 teaspoon pepper or to taste


Cook macaroni in salted water. Meanwhile, brown meat with onion in skillet. Drain off fat. Combine remaining ingredients with beef/onion mixture. Drain macaroni when tender. Add to beef & tomato mixture. Place all in a casserole dish (spray with Pam first). Sprinkle with a bit more shredded cheese, if desired. Bake at 350 for 45 minutes.
