Tomatoes and nectarines might seem like an unusual combination, but they're in season at the same time and go together beautifully.

Ingredients

  • 4 nectarines
  • 2 yellow tomatoes
  • 2 red tomatoes
  • 1/3 cup crumbled Light feta cheese
  • 8 fresh basil leaves coarsely torn or chopped
  • 1/2 teaspoon coarse sea salt
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon pepper
Dressing:
  • 1/4 cup olive oil
  • 2 teaspoons finely grated lemon zest
  • 2 tablespoons lemon juice

Method

Cut nectarines in half and remove pits; cut each half into 6 wedges. Core and halve yellow and red tomatoes; cut each half into 4 wedges. Arrange nectarines and tomatoes on platter.

Dressing: Whisk together oil, lemon zest and lemon juice. Drizzle over salad. Sprinkle with feta, basil, salt and pepper.
