New Potato

Crisp on the outside, meltingly tender inside, these potato slices partner fish to perfection. You will find them irresistible with other dishes, too. Be warned: you may even need to double the recipe.

  • 4 new potatoes
  • 1 tablespoon vegetable oil
  • 1 tablespoon butter melted
  • 1 tablespoon cider vinegar
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper


Scrub potatoes; cut into 1/2-inch (1 cm) thick slices. In large bowl, combine oil, butter, vinegar, garlic, salt and pepper; add potatoes and toss gently to coat well.

Reserving butter mixture, place potatoes on greased grill over medium heat; cover and cook, turning and basting frequently with butter mixture, for about 15 minutes or until potatoes are tender and golden brown.
