Nine-Minute Salmon

Serve this alongside steamed greens, such as bok choy, collards or turnip greens, for a quick, healthful meal.

Ingredients

  • 4 salmon each 6 oz
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon coriander
  • 1/4 teaspoon salt
  • 4 lemon wedges

Method

Place salmon on foil-lined rimmed baking sheet.

In small bowl, whisk together olive oil, paprika, cumin, coriander and salt ; brush over salmon.

Broil until fish flakes easily when tested, about 8 minutes for salmon, about 6 minutes for trout. Serve with lemon to squeeze over top.
