This nutty cheese ball is always a crowd-pleaser, is easy to throw together and can be made the day before! The garlic toasted pita chips make it even more delicious.

MethodMix together cream cheese, drained pineapple, salt and onion powder in a bowl. Beat with a hand mixer. Add the peppers and pecans and mix together by hand with a spatula or spoon. It is best to let the cheese ball chill overnight or at least a couple of hours in the fridge. You can serve this as a platter (with fruit and other cheeses), just shape it into a ball with your hands if desired and place on top of lettuce, with crackers of any kind on the side - my favourite are the garlicky pita chips which are quick and easy to make!
Cut each pita into 8 wedges (or less) Combine the margarine or butter and garlic together in a small bowl. Spread the mixture over the pita chips liberally, place on a pan and pop into the oven for approximately 10 minutes or less at 400 or until lightly browned (they cook fast, so keep on eye on them!) I enjoy my chips slightly softer as they seem to hold together better - but they are great crispy too.
*This makes one medium cheese ball and enough crackers for about 4-6 people. It's very easy to double and I usually do as it tends to go quickly!
