One-Pot Pasta and Tuna

Ingredients

  • 4 cups medium shell pasta
  • 2 1/2 cups frozen mixed vegetables
  • 1 can 2% evaporated milk
  • 1/2 cup light cream cheese
  • 2 teaspoons lemon juice
  • 2 teaspoons cider vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon Dijon mustard
  • 2 cans tuna drained and broken into chunks

Method

In pot of boiling salted water, cook pasta for 4 minutes. Add vegetables and return to boil; cook for 3 to 4 minutes or until tender but firm; drain in colander.

In same pot, whisk together evaporated milk, cream cheese, lemon juice, salt, pepper and mustard until blended and hot.

Return pasta mixture to pot; stir in tuna.
