These sweet and buttery cake-like cookies have slightly crisp outsides and perfectly tender centres. You'll find madeleine pans—the seashell-shaped moulds that give these French treats their signature shape—in specialty baking stores.

Ingredients

  • 3 eggs
  • 1/2 cup unsalted butter melted
  • 1 tablespoon grated orange zest
  • 1/2 teaspoon orange blossom water
  • 1/4 teaspoon vanilla
  • 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/3 cup ground almonds
  • 1/2 teaspoon salt
Orange and Honey Glaze:
  • 1/4 cup icing sugar
  • 1 tablespoon liquid honey
  • 1 tablespoon orange juice

Method

In large bowl, whisk together eggs, butter, orange zest, orange blossom water and vanilla. In separate bowl, whisk together flour, sugar, ground almonds and salt; whisk into egg mixture just until combined.

Spoon heaping 1 tbsp into each mould of 2 greased 12-count madeleine pans. Bake in 350?F (180?C) oven until edges are golden, 12 to 15 minutes. Loosen from pan with tip of knife; invert onto racks. Let cool completely. Orange and Honey Glaze: In small bowl, whisk together icing sugar, honey and orange juice; brush over madeleines. Let stand until dry.
