Humble cooked quinoa gets a boost from vibrant, sweet oranges and peppery arugula. You'll want to make this salad all summer long. Serve with our tender Fig Balsamic-Glazed Chicken Thighs for a tasty meal.

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon white wine vinegar
  • pinch each salt and pepper
  • 3 cups cooked, cooled quinoa
  • 3 cups lightly packed baby arugula
  • 2 oranges segmented
  • 1 green onion thinly sliced

Method

In large bowl, whisk together oil, lemon juice, vinegar, salt and pepper. Stir in quinoa and arugula; toss to coat. Fold in oranges and green onion.
