Oven-Roasted Plum Tomatoes

Ingredients

  • 4 plum tomatoes
  • 1 tablespoon extra-virgin olive oil
  • 1/4 teaspoon each salt and pepper

Method

Cut tomatoes in half lengthwise. Arrange in foil-lined metal pan. Drizzle with olive oil; sprinkle with salt and pepper. Roast in 450°F (230°C) oven until tender and slightly shrivelled, about 50 minutes.
